Old-Fashioned Applesauce Spice Cake

A cozy, old-fashioned Applesauce Spice Cake with a quick caramel glaze. Simple to make with basic pantry ingredients. Perfect for fall and winter baking.

Ingredients
  

  • CAKE
  • 2 1/2 cups flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground allspice
  • 1/2 tsp nutmeg
  • 1/2 cup butter
  • 1 cup maple sugar or regular sugar
  • 1/2 cup milk
  • 1 1/2 cups applesauce
  • 2 eggs
  • 2 tsp vanilla
  • GLAZE
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1 tbsp milk or cream

Method
 

  1. Preheat oven to 350ºF.
  2. Combine flour, sugar, baking soda, salt, baking powder, and spices in a large mixing bowl. Set aside.
  3. In a second bowl, beat together the butter, sugar, milk, applesauce, eggs, and vanilla.
  4. Slowly add the dry mixture to the wet mixture and mix well.
  5. Pour batter into a greased and floured 9x13 inch baking pan.
  6. Bake at 350ºF for 25-30 minutes.
  7. Cool for one hour. Prepare the glaze and pour over the cooled cake.
  8. Slice and enjoy.
Glaze Instructions
  1. Bring to a boil over medium heat, whisking, let bubble and caramelize for a couple minutes, then pour glaze over cake. Don't overcook or it will harden into stiff caramel.
