Homemade Chocolate Pudding

The simple pudding recipe I've been making and adding to lunchboxes for over thirty years. Made with pantry staples, and comes together so quickly.

Ingredients
  

  • 1/2 cup sugar
  • 1/3 cup cocoa powder
  • 3 tbsp cornstarch
  • 1/8 tsp salt
  • 2 cups milk
  • 2 tsp vanilla extract
  • 2 tbsp butter

Method
 

  1. In a medium sauce pan, whisk together sugar, cocoa powder, salt, and cornstarch. Slowly whisk in milk and heat over medium heat until thick and bubbly. Whisking the entire time.
  2. Once bubbling, whisk for one more minute.
  3. Remove from heat, stir in vanilla and butter.
  4. Pour into containers and chill completely.

Notes

We use maple sugar more than cane sugar, and it works perfectly in this recipe.
