Blueberry Glacé Pie | Fresh Blueberry Refrigerator Pie

Made with fresh-picked blueberries and a simple homemade glaze, this Blueberry Glacé Pie is a classic summer dessert that's both beautiful and refreshing. Serve it chilled with a dollop of whipped cream for a sweet taste of blueberry season.

Ingredients
  

  • 5 cups fresh blueberries
  • 3/4 cup orange juice
  • 3/4 cup sugar
  • 1/4 cup water
  • 3 slightly rounded tablespoons cornstarch
  • 1 9 inch graham cracker pie shell, homemade is best

Method
 

  1. Simmer 1 cup berries with orange juice and sugar for about 4 minutes, berries will burst.
  2. Mix water in a small bowl with cornstarch.
  3. Add mixed cornstarch to the pot, simmer a few minutes longer until thickened.
  4. Press mixture through a fine strainer into a bowl, add remaining berries and mix gently.
  5. Pour into pie shell, chill for at least 4-6 hours.
  6. Top with whipped cream or homemade vanilla ice cream.
